Haskap-Chocolate Chia Seed Pudding Recipe
1/2 cup haskap berries (fresh or frozen) + extra for top
1 cup canned coconut milk (find in Asian section at store)
1 tablespoon honey (or more to taste)
2 tablespoons cocoa
1/3 cup chia seeds
1 teaspoon vanilla
Mix all ingredients except chia seeds in blender.
In a large bowl, add the ‘smoothie’ to the chia seeds and whisk well to combine.
Pour into bowl of your choice and allow it to set in the fridge overnight or until ready to be consumed. Top with berries.
Healthify your pudding by adding a tablespoon of ground flax seed and switching the cocoa for cacao (Nature’s Fare)
