INGREDIENTS (makes 5-6)
2 pounds ground turkey
1 cup almond flour
1/2 onion, diced very small in food processor
salt & pepper, to taste
1/2 cup of fresh or frozen haskap berries
2 tablespoons honey (or more to taste)
3 tablespoons chopped parsley
Place first five ingredients in large bowl and mix loosely.
Form about 10 medium-sized balls.
In a large non-stick pan, add 2 tablespoons of butter and 2 tablespoons avocado oil and warm over medium heat.
Place turkey balls in pan and fry until one side is brown. Carefully turn balls over using two spoons. Fry until brown.
Add 1/3 cup water, cover with lid and let simmer - 25 minutes.
Make haskap sauce as per Haskap Flatbread Recipe.
Serve with mashed potatoes and green beans or vegetables of your choice. Sprinkle with parsley.
